Why is Raw Honey better?
Raw honey isn’t pasteurized or filtered, so pollen particles, phytonutrients, enzymes, amino acids and micronutrients remain intact and bioavailable in each jar.
A simple test: if your honey never crystallizes in winter, it was likely heated before bottling. Liquid looks great on a shelf, but heat kills what makes honey worth eating. We don't sacrifice nutrition for aesthetics.
Is your Honey flavored?
Every flavor note comes entirely from the nectar our bees collect. You will see 'nectar notes' in our honey catalog descriptions for each batch available. Nectar is essentially flower sugar water — and just like grapes express the soil and climate they grow in, nectar expresses the plant it came from.
Different blooms carry different volatile compounds, minerals, and sugar ratios, which is why wildflower honey from a Texas Hill Country ranch tastes nothing like honey pulled from urban Austin hives surrounded by crape myrtles and loquats. That's why you'll see tasting notes like dried apricot, star anise, or crème brûlée in our batch descriptions. We didn't add anything. The bees just went to work!
Does Raw Honey spoil?

Your honey may crystallize or deepen in color over time, but that's not spoilage, that's physics! Gentle warming in a warm water bath will return it to liquid anytime.
Crystallized honey is a groggy morning's best friend. Spoon it straight into your coffee or tea. No dripping, no mess, no chasing a stream of honey across the counter.
Why don't we call our Honey “Organic”?
That word carries a lot of weight — and not much regulation. There's no USDA certification specifically for domestic organic honey.
Honey is the 3rd most adulterated food, after olive oil and milk, making it a subject for widespread 'fraud'. Repackers are NOT required to disclose they took honey from a barrel and stuck it in a jar; Which means honey labeled "organic" in the U.S. is IMPORTED IN BULK BARRELS, blended with domestic product, and repackaged without any disclosure requirement.
We don’t play label games. Our honey is harvested by hand right here in Austin, usually at the apiary so we can immediately place the wet supers back on the hives.
