About our honey
Nectar Spell began in scattered bee yards across Central Texas: quiet places where bees weave together the nectars around them.
We harvest 1-2x per year from our stationary apiaries located throughout Travis, Bastrop and Williamson County, bottling each yard separately. This practice allows us to offer uncommon nectar combinations that tout just how nuanced our landscapes are. Even bee yards 5-10 miles apart access completely different fields and flowers, which is why we see such variation!
Our Honey Catalog lists nectar notes (tasting notes) for each batch we bottle. From year to year, even the same bee yard can yield colors drifting from pale blonde to deep espresso.
Unlike the familiar caramel color and flavor of typical mass-produced, blended barrel, pasteurized, REPACKAGED “wildflower” honey, small-batch honey showcases a much wider range of tastes, aromas, and colors than what is usually found on grocery store shelves.
During our years of beekeeping, we've witnessed many seasons of rain, drought, and landscape changes around Austin. Not every year is a "good honey year"; sometimes the harvest is small, sometimes we leave all the honey on the hives to overwinter. But, the joy of sticking a finger in a honey frame to taste a little for yourself never gets old. There's a deep humility in tending to living creatures, even those as small as bees. When the nectar flow is plentiful, sharing the harvest feels like the land inviting us to celebrate it.
