Why is Raw Honey better for me?

Raw honey isn’t pasteurized or filtered, so pollen particles, phytonutrients, enzymes, amino acids and micronutrients remain intact and bioavailable in each jar.

If your bulk honey doesn't crystallize in deep winter- its most likely heated then bottled to prevent crystallization. Sure it will stay liquid, but it isn't as "raw" as large producers would like you to assume! We don't sacrifice nutrients for looks.

Its not our doing- at least for now; Only by the blooms our bees find! You will see 'nectar notes' in our honey descriptions highlighting several subtle flavors you may pick up trying our batch harvests. Just like wine, cheese, and coffee, honey has its own flavor wheel! Its kind of our obsession...

Why don't we call our Honey “Organic”?

There’s no USDA category specifically for organic honey.

Because of that, most honey labeled “organic” in the U.S. is imported in barrels, then mixed with honey produced in the states. Repackers are not required to disclose this, but the organic distinction says it all! Honey is the 3rd most adulterated food, after olive oil and milk, making it a subject for widespread 'fraud'

We don’t play label games. Our honey is harvested by hand right here in Austin, usually at the apiary so we can immediately place the wet supers back on the hives.

Does Raw Honey spoil?

No, 100% raw honey does not go bad if stored properly in a sealed container. Our lids have food safe, airtight seals.

Honey’s high sugar content, natural acidity, and low moisture prohibit bacteria and other microorganisms from growing. Spoilage will happen only when moisture is present, enabling fermentation. Raw honey can last indefinitely, although it may crystallize or change color over time.
